Filter coffee, the slow way

Roasted at five, brewed by six, and poured at our counter from half past. Here's how, and how to make it at home.

  1. 5:00 am

    Roast

    Peaberry and plantation A beans, roasted in small batches until they just start to crack a second time.

  2. 5:40 am

    Blend and grind

    Blended 80:20 with chicory for body, then ground medium-fine, the way a filter likes it.

  3. 6:00 am

    Brew

    Four spoons in the top chamber, boiling water poured slowly, and twenty minutes of waiting for the decoction.

  4. 6:30 am

    Serve

    One part decoction, three parts boiled milk, sugar to taste, and poured between davara and tumbler until it froths.
